Cooked up some carrot and coriander fritters with green yogurt sauce for dinner. Quick, healthy and rather tasty 🙂
Recipe (from Leiths vegetarian bible)
15g melted butter
100g plain flour
1/2 tsp baking powder
1 1/2 tsp ground cumin, 1/2tsp tumeric
pinch of cayenne pepper, pinch of salt
340g grated carrot
2 tsp coriander seeds
6 spring onions
3 tbs chopped coriander
oil for frying
1. Beat the eggs, milk and melted butter in a bowl add flour, baking powder, cumin, turmeric, cayenne and salt. Beat again.
3. Heat the oil in a shallow frying pan and place 4 large spoonfuls of the batter into the oil. Fry fritters for 1 1/2 minutes on each side. I used my sandwich toaster. Less oil!
For a dressing you can blend natural yogurt with spring onions, fresh ginger, jalapeno chillies, fresh mint and coriander. Pinch of sugar and salt to taste. Whizz up with a hand blender and chill before serving.
